What you’ll need
- Marinade:
- 8 chicken drumsticks
- 3 garlic cloves
- 2 tsp smoked paprika
- 1 scant tbsp brown sugar
- 1 red chilli
- 1 tbsp honey
- ½ orange, juice only
- 1 tsp english mustard
- Handful of fresh parsley and coriander
- Salt and pepper
- Olive oil
- To Serve:
- 1 diced chilli
- 1 lemon
- Fresh coriander
- Yoghurt with chopped herbs (coriander and mint)
- Slaw:
- 2 Carrots peeled
- Small Handful Parsley
- 1 stick of Celery finely sliced
- 1 Red onion sliced
- ½ Brocoli
- 1 tsp Dijon
- ½ Lemon, juice
- 100ml Olive oil
- Salt and pepper
Method
Marinade your chicken the night before by blitzing all the ingredients and rubbing into the chicken, then cover and leave in the fridge.
The next day, cook the chicken on BBQ and make your herb yoghurt by chopping the herbs and mixing with the yoghurt. Garnish with fresh lemons, chilli and fresh coriander.
Make the slaw dressing first by mixing together the mustard and lemon juice then stirring in the olive oil, season well.
Snip the tops off half a head of broccoli then mix with all the other ingredients and the dressing.
