My Bag-in-Box Vintage Still Cider pairs beautifully with British reared turkey, adding a delicious appley twist to those festive flavours. Simply baste your turkey with my Vintage Cider to add bags of flavour and moisture, plus it makes for a glorious gravy.

What you’ll need

  • 2 leeks
  • 2 carrots
  • 2 onions
  • 2 celery sticks
  • 1 whole garlic, cut in half
  • Thyme
  • Butter (a few knobs)
  • Turkey crown covered with bacon (2.6kg approx)
  • Bag-in-Box Henry Westons Vintage Still Cider
  • Flour

Method

  1. Start by preheating the oven to 200 degrees.
  2. Next roughly chop the vegetables, then add the vegetables, thyme, garlic and butter into a large ovenproof dish. Place the turkey crown into the dish, cover with a lid and place into the oven for an hour.
  3. After an hour remove and pour over Henry Westons Vintage Still Cider and put back into the oven for another 20 minutes until the center of the turkey reaches 65 degrees.
  4. Remove from the oven and leave to rest for 20 minutes before pouring and straining the liquid into a sauce pan. Leave the turkey to rest for another 10 minutes while you make the gravy.
  5. For the gravy, start by simmering the juices gently and whisking in a little roux (equal amounts of flour and butter). Let it simmer for 10 minutes until the turkey has completely rested.
  6. Serve with all the trimmings and a glass of Henry Westons Vintage Still Cider.
